I have to tell you that I am a huge Spaghetti fan. Were it not for how messy it makes my kids, we would eat it a lot more than we already do.
I just found this recipe from Cooking Light that I really like. I love it because the sauce is so simple but it tastes like it has been simmering for hours. And the shaved pieces of parmesan reggiano don't hurt either.

Chocolate Chip Dutch Baby

Horrible, horrible name for a recipe. But what a delicious, delicious breakfast item (I am not sure it qualifies as a breakfast item, but it was in the breakfast section of my cookbook, so I am going with it.)
Best thing about it is that it is a pancake. With chocolate chips. And it requires no flipping. I haven't exactly inherited my mother's talent for flipping pancakes. She makes the best pancakes. Mine are messy and go all over the place. So I was super excited to see a recipe that allowed me to cook the pancake in the oven. And add chocolate chips. And Kahlua.

Chipotle Chicken Taco Salad
I recently had some friends from church over for dinner and made this menu. My friend asked me to post it, so I thought I would just post it here.
I love Taco Salads and make several different variations throughout the summer. I love this one because it is spicy but not too spicy. Super yummy. And the accompanying Watermelon Mango Salad with Mint is super refreshing. Enjoy.
